At Fox Creek we give as much consideration to selecting our barrels as it’s an integral part of making our wines. Cooperage is an art, with coopers owning individual processes that they use during production of their barrels. They need to get it right because it influences the characteristics that barrel imparts on the wine. It is intriguing to think that if you gave half a tree to two different coopers, they would produce two completely different tasting barrels. It is that individual, that critical.

Our oak philosophy is to support the flavour profiles derived from each of the vineyards we source from, not swamp them. We help them in any way we can, even in the most challenging years. It gives us a great sense of community, being able to combine Fox Creek winemaking expertise with the meticulous efforts of our growers.

By fusing together the latest technology with traditional techniques, we embrace the best of both worlds, resulting in the finest quality, most diverse wine to market.

The success of the Fox Creek oak philosophy is that it focuses on the way we utilise sympathetic oak in order to enhance our wines. Blending from different sources across the Vale provides variety, in both tannin and flavour profile.

Different vineyards have different needs relating to maturation and oak support. Barrels have a tangible impact on wine, so we use our expertise to recognise what each vineyard has and needs, as well as what each barrel type gives us. This ensures the final wines have been strategically and carefully selected and the final blend is the ultimate reflection of our craft.

The partnership between the oak and the wine is so integral that we select a range of barrels that best suit each vineyard. With our intricate knowledge of how different oak styles perform; we can match the right oak profile to the wines from each vineyard to ensure they fully express themselves. Ultimately, this allows us to get the end result that we envisage, producing the base wines we require to blend a diverse range of wines with unique characteristics.
