Fox Creek Reserve Cabernet Sauvignon

A deeply coloured red wine with a typical aroma and flavour of blackcurrant complemented by flavours of dark cherry, chocolate and spice. This is an outstanding wine with excellent balance and long firm tannins that becomes more complex with age. A period of decanting is recommended.
Appearance
Deep Maroon.
Bouquet
Fresh leafy lifted mint, cinnamon and clove, overlaying red cherry fruits, roasted chestnuts and dark chocolate.
Palate
Blackcurrant and blackberry flavours lead into a creamy dark chocolate mid palate. The long soft structural grape tannins integrate well with the firm but elegant oak tannins to give the wine fantastic finesse and balance.
Winemaking
Sourced from premium McLaren Vale vineyards with well drained sandy loam soils and red alluvium. Harvested when fruit flavours, grape tannins and acids all reached maturity. Fermentation on skins was for 8 - 10 days with all of the wine completing barrel fermentation. Considered maturation of each vineyard batch in oak specifically matched to these Cabernet vineyards from a range of French coopers. The batches were shifted between different oak types to impart layers of flavour and enhancing the structure during its 18 month maturation in new to 2 year old oak barrels. Barrel by barrel selection during all stages of maturation ensure only the best Cabernet barrels were selected for the final blend.

Ageing potential
A vibrant and elegant wine which will drink well from mid 2013 onwards and will reward careful cellaring till at least 2024 and beyond.
